Why it's not "another agentic system"

Self-healing · homeostasis
The organism self-regulates: it creates new cells when load increases and removes them (apoptosis) when no longer needed, and if a part fails, it detects it and self-heals. What would be an incident —or permanent over-provisioning— in an agentic system is routine here.

UNO reads every tank's sensors in real time —temperature, density, pH, SO₂— and steers fermentation right on target: it weighs different alternatives and applies the optimal one. In a first phase it learns from the process and from expert winemakers; then it detects deviations and acts on its own —adjusting cooling, scheduling pump-overs, alerting the winemaker and keeping a record—. All on-premise, over your winery.
